Learn how to create the perfect post-(not)parkrun recipes and join us for our first cook-along with Jenni Falconer!

 

Join us Saturday 12 December for the first Cook with Co-op with running enthusiast Jenni Falconer as we whip up an easy, quick and tasty post-(not)parkrun brunch recipe.

 

We know lockdown has been tough for everyone, especially finding the right balance between exercise and eating healthily. As the days get darker and the weather gets colder it becomes even more difficult to stick to our health and exercise goals. The stresses of balancing working from home with a lack of routine can be difficult to deal with and often lead us to making unhealthy choices when it comes to food. While (not)parkrun has your exercise for the week covered let us sort out the food.

 

Jenni will be joined each week by Co-op Innovation Chefs Stewart Nichol and Ed Fraser as they discuss all things food and how we can feel good during the pandemic. Join us for our weekly cook-along as we show you just how easy it is to rustle up tasty, simple and healthy post (not)parkrun brunches you and the whole family can enjoy. This week we will be rustling up an open toasted sandwich with seared salmon fillet, sautéed spinach, tomatoes and almonds, on fresh baked toasted bread with a poached egg.

 

What you will need:

110g Co-op Salmon Fillet

50g Co-op Baby Spinach

20g Co-op Flaked Almonds

150g Co-op Cherry Tomatoes

1 Slice Co-op Irresistible Hand Finished Seeded Sourdough

1 Co Op British Medium Free Range Egg

2 tsp Balsamic Vinegar

1 tsp Co-op Olive Oil

 

Or why not try our vegan alternative of beetroot, orange and avocado, toasted pine nuts, rocket, balsamic dressing on fresh baked toasted granary/sourdough bread

 

What you will need:

20g Pine Nuts

50g Co-op Wild Rocket

3 Balls Co-op British Cooked Beetroot

1 Orange

½ Avocado

1 Slice Co-op Irresistible Hand Finished Seeded Sourdough

3 tbsp Co-op Olive Oil

1 ½ tsp Balsamic Vinegar

Salt and Pepper
