Cook with Co-op – Ed’s Porridge with Compote

Oat so fine, it’s porridge time! Our friends at Co-op have been out in the park again, so why not spice up your bank holiday weekend and try Ed’s quick and simple Porridge with Compote recipe, which packs enough of a punch to kick-start your day and refuel in the right way.

Here are the Co-op chefs to show you just how easy it is…

What you’ll need:

(Serves 2)

35g medium oatmeal

65g porridge oats

200ml full fat milk

200ml water

250g blueberries

Squeeze of honey

1 star anise



  1. Put the blackberries into a saucepan with the sugar, star anise and 75ml water.
  2. Bring to boil, turn the heat down and simmer until the fruits begin to break down. Keep warm
  3. Toast the oatmeal and porridge oats in a dry frying pan for 5 minutes until they smell warm and nutty.
  4. Pour the milk and water into a non stick saucepan and bring to the boil.
  5. Lower the heat and add the oats.
  6. Simmer, stirring continuously for 7-10 minutes until thick and creamy.
  7. Serve the porridge with a generous spoon of compote and maple syrup if some extra sweetness is required!
